Beef Bourguignon
I’ve experimented with new dishes in my new free time in quarantine. I made this stew because it reminded me of the last fun thing I did before the world shut down: traveled to Paris to visit a friend in grad school. I had this beef bourguignon on a rainy evening in a cozy restaurant near the Paris universities. My version has potatoes since I’m Irish, and no mushrooms since I’m allergic! As I served myself with bread and leftover wine from cooking, I inevitably thought of the thing I miss the most: receiving the body and blood of Christ in the form of bread and wine in community. I said a prayer of thanksgiving for physical nourishment, and a prayer in hope of receiving the spiritual nourishment soon too.
